Try this instant Jilebi which takes less than an hour to make. Serve them hot as is or with vanilla ice cream.
My Amma made this for my son's 10th birthday and it was a big hit. This is one of the few sweets that he loves. These are the instant ones and requires no soaking or no fermentation.
All purpose flour - 1 cup
Corn flour - 1/4 cup
Baking Soda - 1/2 tsp
Oil for deep frying
Sugar Syrup:
Sugar - 2 cups
Water- 1 cup
Food color - pinch
Saffron - 1 pinch
Cardamom - 1 pinch
Lemon juice - 1 tsp
How to make:
In a mixing bowl, add the flours and mix well with water till you get idly batter consistency.
Add the baking soda and give a final mix.
In a flat bottom pan, heat oil for deep frying.
Prepare the sugar syrup:
In a tall pan, heat the water and sugar and mix till the sugar is dissolved.
Heat till you get a sticky 1/2 string consistency.
Add saffron, cardamom and food coloring.
Squeeze lemon to avoid crystallization.
Frying the Jilebi:
Fill the batter in a piping bag with a medium sized round tip. Alternatively you can use a Ziploc bag and snip a corner.
Squeeze Jilebi into the hot oil in circles.
Fry in both sides till golden brown.
Drain oil and drop into the warm sugar syrup.
Let it soak for a couple of minutes and then set aside.
Enjoy hot Jilebi with vanilla ice cream or as is!
