Simple Beans Poriyal | OPOS

This is basically the lesson 2 of OPOS cooking. If this is your first time to OPOS please read more about it HERE.

Apart from the prep time of cutting the beans, this dish takes less than 3 minutes. Yes you heard me right, it is that simple and the color and flavors are truly awesome. One can appreciate it only after trying and experiencing it at home.



Serves 2-3
Ingredients Required:
Beans - finely chopped - 2 cups
Coconut Oil - 1 tsp
Water - 1 tblsp
Salt - pinch
Turmeric powder - 1 tsp
Shredded Coconut - 1/4 cup

To season:
Coconut Oil - 1 tblsp
Mustard seeds - 1 tsp
Red Chilli - 2
Hing - pinch

How to make:
In a heavy bottom 2 liter pressure cooker layer as below.
Layer 1 - Water+Oil
Layer 2 - Beans (spread out)
Layer 3 - Turmeric powder + Salt
Close and cook with whistle on high for 2 whistles. Release pressure.
Open, add the coconut.
In a small pan, add the coconut oil for seasoning. When hot add the mustard seeds and allow to splutter and red chilli and hing.
Add this to the poriyal.



Notes:
Do not add more water than what is mentioned. The beans would get cooked in its own juices.
Instead of fresh tadka, we can use bottled tadka to save time, as the time taken to make the tadka is more than to make the main dish!
You can basically try experimenting the same method with different vegetables.
