Raw rice - 1 cup
Water - 1 cup
Olive oil - 1 tblsp
Lemon Juice - 2 tblsp
Cilantro - 2 tblsp, finely chopped
Salt - to taste
Garlic - 1 tblsp, finely chopped

How to make:
- Soak the rice in water for 20 minutes.
- Heat the olive oil in the skillet
- When hot add the garlic and fry till light brown
- Add the rice and fry till it becomes transparent.
- Add the water and salt. Close the pan.
- Cook on medium low heat for 5-6 minutes till the rice is done.
- When done, add the lemon juice and cilantro.
- Fluff with fork.
