We love mexican food as a family and one of our favorite fast food joints in the Chipotle. We love both the burrito and rice bowl and my son the kids meal. We tried re-creating the rice bowl at home and it was super yummy. Makes a great nutrient packed lunch on any day.
Servers 3-4
Ingredients Required:
Lemon Cilantro Rice - 2 cup
Black Beans - 1 can (you can also use re-fried beans)
Guacamole - 1 cup
Salsa - 1 cup
Shredded Cheese - 1 cup
Olives - 1/4 cup
Jalapenos - 1/4
Bell Pepper - 1 cup , thinly sliced (any color)
Sweet Corn Kernal - 1/2 cup
Onion - 1, thinly sliced
How to make?
In a bowl layer the below, you can adjust the quantities to your liking.
1 - Lemon Cilantro Rice
2 - Black Beans / Re-fried Beans
3 - Vegetables
4 - Guacamole
5 - Salsa
6 - Shredded cheese
Notes:
1. You can use fresh vegetables as is or roast them in olive oil, as per your liking.
