So I am sure you all would have guessed that something related to Tutti Frutti was coming up, as I just made a huge batch of Tutti Frutti yesterday. Well we need to get those into use, don't we?
This is an attempt to make it similar to the Brittania Tutti Frutti Cake, which I used to love as a kid.
The outcome was very close and my son loved it. This is a light and fluffy cake and the sweetness is on the lesser side so makes a perfect breakfast slice as well. If you have a sweet tooth, please add more sugar!
How to make Tutti Frutti?
Makes 1 8x8 loaf pan
Ingredients Required:
All purpose flour - 1.5 cups
Yogurt - 3/4 cup
Sugar - 3/4 cup
Oil - 1/2 cup
Vanilla Extract - 1 tsp
Baking powder - 1 tsp
Baking Soda - 1/2 tsp
Milk - 1/4 cup
Tutti Frutti - 3/4 cup

How to make Tutti Frutti?
Ingredients Required:
All purpose flour - 1.5 cups
Yogurt - 3/4 cup
Sugar - 3/4 cup
Oil - 1/2 cup
Vanilla Extract - 1 tsp
Baking powder - 1 tsp
Baking Soda - 1/2 tsp
Milk - 1/4 cup
Tutti Frutti - 3/4 cup
How to make:
- Pre heat the oven to 350 degrees.
- In a large mixing bowl, add the yogurt, sugar, vanilla essence and oil.
- Use a hand mixer or whisk till well incorporated and sugar dissolves
- Add the flour, baking powder and baking soda.
- Mix and fold till the batter is well incorporated. Do not over mix.
- Depending on the batter consistency add in the milk and mix.
- Batter should be thick flowing consistency.
- Add the tutti frutti and gently fold in.
- Grease the baking pan with oil or parchment paper.
- Pour the batter in the pan and bake for 50 minutes in the pre heated oven.
- Insert a toothpick in to check if the cake is done.
- Cool completely before slicing.
- Server as thick slices.
