Plain Kulcha - No Yeast - Stove Top

This Sunday we cooked ourself a scrumptious North Indian Thali with Kulcha. These are simple to make and super delicious. Pair it up with some dhal and curry and treat yourself to a delicious meal.
 

Makes 8
Ingredients Required:
All Purpose Flour - 2 cups
Yogurt - 1/4 cup
Oil - 2 tblsp
Milk - 1/2 cup (warm)
Salt - 1 tsp
Sugar  - 1 tsp
Baking Powder - 1 tsp
Baking soda - 1/4 tsp
Butter - to apply on top
Cilantro - finely chopped
Nigella/Black sesame Seeds - 1 tblsp

How to make?
  • In a large mixing bowl, add the flour, baking powder, Baking soda, salt and sugar. Mix well.
  • Add in the yogurt, milk, oil and knead to a sticky dough
  • If required sprinkle some water. Apply oil to your hands to avoid the dough sticking.
  • Knead for 5 minutes.
  • Cover with a damp cloth and set aside for 2 hours
  • Make 8 equal size balls.
  • Take a ball of dough, place on a oiled surface to avoid sticking to the surface
  • Gently spread out the dough to a circle, with your finger tips. If required you can use a rolling pin, but I prefer my hands.
  • Lift the flattened dough, sprinkle some sesame seeds and chopped cilantro in the bottom and press the dough on top, so it sticks
  • Generously brush with water on the top surface, this would make the kulcha stick to the pan so we can turn it upside down
  • Heat a iron pan (or any pan that is not non-stick) to high heat
  • Place the kulcha, water side down on the hot tawa.
  • Reduce the heat to medium and in a minute you would see bubbles on the kulcha
  • Turn the pan upside down so the top side faces the fire directly. Keep it this way for around 30 seconds till you get brown dots on the Kulcha
  • Remove from pan with tongs, brush with butter on top and serve hot 

We enjoyed these Kulcha's with some Dal Makhani, Stir Fry Gobi and a simple Jeera Rice!
