This is a simple one pot meal made in the instant pot with rice, channa and spices. As simple as that, you will have a wholesome lunch in less than 20 minutes and enjoy with some onion raita.
Makes a great lunch box or workday meal.
Serves 4
Ingredients Required:
Channa - 1.5 cups cooked or 1 can garbanzo beans
Basmati rice - 1 cup, soaked for 20 minutes
Onion - 1, finely chopped
Tomato - 1 finely chopped
Ginger garlic paste - 1 tblsp
Green chilli - 2, slit lengthwise
Channa Masala Powder - 1.5 tblsp
Salt - to taste
Turmeric powder - 1 tsp
Cilantro - finely chopped for garnish
Lemon - couple of wedges
How to make?
- Set the IP in saute mode and add oil
- When hot, add the onion and ginger garlic paste and saute till golden brown and well cooked
- Add the tomato and green chilli and saute for 3 minutes.
- Add in the channa masala powder, salt and turmeric powder
- Add 1.5 cups of water and bring to a boil
- Add in the soaked rice and channa and mix well such that they are well immersed in water
- Close the IP and cook in manual mode for 5 minutes
- Natural pressure release for 10 mins and then open the lid
- Fluff up with fork
- Garnish with chopped cilantro and squeeze a dash of lemon before serving
- Serve hot with onion raita
Notes:
- You can use canned garbanzo beans or soak 1/2 cup channa over night and cook in IP for 40 minutes
- You can use garam masala instead of channa masala powder, but using channa masala will give you a better taste
