Who loves the sundal that we get on the roadside shops or beaches in India? It is a simple sundal with some mangos and spice healthy and a delicious evening snack.
Being Navarathri this was one of the days prasadam.
Ingredients Required:
Raw Green peas - 1 cup, soaked in water for 4 hours
Raw Mango - 1, chopped into small cubes
Carrot - 1, grated
Coconut - 1/4 cup grated
Coconut oil - 1 tblsp
Mustard seeds - 1 tsp
Red chilli - 2 broken into small pieces
Curry leaves - few
Hing - 1 tsp
Salt as required
Sundal Spice powder - 1/4 cup
How to make:
Pressure cook the soaked raw green peas for 2 whistles or 6 minutes in the instant pot.
Drain the water and let it cool.
In a pan, add the oil and when hot add the mustard seeds.
When it splutters, add the red chilli, curry leaves, hing, salt and the spice powder.
Saute for a minute and then add the mango pieces, carrot and the coconut.
Saute for a minute.
Add the cooked sundal and give a nice toss till everything is well incorporated.
Garnish with chopped cilantro and serve hot.
Notes:
Green peas tend to cook very fast so be careful on the cooking time else will be mushed up.
Can be substituted with white peas as well.
