Mint Paruppu Vadai

Similar to the Paruppu Vadai with some flavor enhanced with fresh mint.


Ingredients Required:
Channa Dhal - 1 cup
Red chilli - 2
Kashmiri Red Chilli - 3
Curry leaves - few
Hing - big pinch
Mint - 1/2 cup finely chopped
Cilantro - 1/4 cup finely chopped
Oil - to fry

How to make:
Soak the channa dhal for 3 hours along with chilli.
Set aside 2 tblsp of the soaked channa dhal aside and grind the remaining with chilli into a coarse paste without any water.
Add in the remaining channa dhal, mint, cilantro, curry leaves, hing and salt.
Mix well.
Heat oil in a pan on high.
When hot reduce the flame to medium.
Take like size balls of the batter and pat it into a disc.
Drop it is oil and fry till golden brown.
Strain and repeat for all the batter.

Notes:
Add the mint and cilantro just before frying, else it will leave water in the batter.
Don't wait till the oil bubbles subside else the vada will burn. Remove it when it is golden brown
