Pesto is a great dip for various dishes. You can use on top of pizza , or as a pasta base or even a simple spread for your sandwich. I love to have basil avacado sandwich for breakfast. Initially I used to buy pesto but once I started making them at home, never looked back. These are the most simplest to make at home in less than 5 minutes.
I usually substitute nuts with Pecans or walnuts. You will not find the difference.
You can add parmesan cheese to the below recipe but I decided to keep it vegan. This recipe is a great recipe to pack in the nutrients from spinach as well and results in a lovely green color.
Ingredients Required:
Basil - 2 cups
Spinach - 1 cup
Olive oil - 1/4 cup
Pecans - 1/4 cup
Garlic - 2 cloves
Salt - 1 tsp
Lemon juice - 2 tblsp
How to make:
Add everything into a blender and blend to a fine paste.
Store in an air tight container in the refrigerator bfor upto a week.
Notes:
You can add 1/4 cup of parmesan cheese for a non-vegan version.
