Tutti Frutti Cookies on Stove Top

So its been a while since I posted on how to make Tutti Frutti. I have been trying out new recipes using that. I tried out the Tutti Frutti Cake that is similar to the Britannia Fruit Cake. Now it is time to make some bakery style Tutti Frutti Cookies. And the best part is they are baked on a stove top, so no oven is required!




Makes 20
Ingredients Required:
Butter - 1/2 cup, room temperature
Sugar - 1/2 cup
Vanilla Essence - 1 tsp
Cardamon - 1 tsp
Baking Powder - 1/2 tsp
All purpose Flour - 1 cup
Corn Flour - 1/4 cup
Tutti Frutti - 1 cup
Milk - 2 tblsp (optional)

How to make?
  1. In a large mixing bowl, beat the sugar and butter till creamy. You can beat with a whisk or a electric beater
  2. Add in the vanilla, cardamon and give a mix.
  3. Add in the flours, baking powder and mix
  4. Add in the tutti frutti and gently combine. Do not knead,
  5. If the dough is very dry add in milk. It should be a stiff rollable dough.
  6. Split into two parts and roll out into 2 inch diameter logs.
  7. Cover with cling fling and refrigerate for an hour.
  8. After an hour, slice into 1/2 inch thick discs and set aside.
Stove Top Preparation:
  1. You can use a cooker without weight and gasket or a vessel/pan with a lid.
  2. Fill with 2 cups of salt.
  3. Set a stand/trivet.
  4. Close and preheat on medium heat for 10 minutes.
  5. Place the cookies on a plate and place inside the pre heated vessel.
  6. Cook for 15 minutes on medium heat. Check in intervals after 10 minutes. The cookies are done when their bottom is golden brown and the top is light brown
  7. Cool and serve


Notes:
  1. These can also be baked in an oven at 350 for 10-12 minutes.
