Taco Night! - Veg Taco

Dinner can be fun when it is Taco night and when the kids get to make their own Tacos. Yesterday was Taco night at our house and we usually have this often - either for lunch or dinner. It is super simple and quick to prep up and super fun to eat with family on the dinner table. This also makes a great party food!

Serves - 4
Ingredients Required:
Hard shell Taco - 8

Black Beans - 1/2 cup
Green Bell Pepper - 1, thinly sliced
Onion - 1/2 cup, finely chopped
Cumin Powder - 1 tsp
Salt - as required
Red Chilli Powder - 1 tsp
Oil - 1 tsp
(Or you can use canned beans with mexican seasoning)

Guacamole - 1 cup
Salsa - 1 cup

Onion - 1/2 cup, finely chopped
Tomato - 1/2 cup - finely chopped
Olives - 1/2 cup , sliced
Jalapeno - 1/4 cup

Shredded Cheese - 1 cup (I used a mix of Cheddar and Mozzerella)

How to make:
  • If you are not using canned beans, then soak the beans for 6-8 hours
  • Cook them till soft (either in pressure cooker - 3 whistles, or in Instant Pot - Bean setting)
  • In a skillet, add the oil and when hot, add the onions and thinly sliced bell peppers and spice powders
  • Cook for couple of minutes and then add the beans. Cook for couple of minutes and set aside
  • Set the beans, guacamole, salsa, cheese, onions, tomato, olives, jalapenos is separate bowls
  • Start by taking a taco shell, scoop in some of all the ingredients to you liking and top it up with cheese and bite away!
