Broccoli - Spinach - Cheese Quesadilla

These are super easy to make yummy quesadillas and I guarantee that it would be any kids favorite. They make a great lunch box menu for the kids to take to school. Pair it up with some salsa or guacamole and why would you want to even go to a Mexican Restaurant?

Try out the simple bean vegetables quesadilla as well!




Makes 8 triangles
Ingredients Required:
Flour Tortilla - 4
Baby Spinach - 1 cup (finely chopped)
Broccoli - 1 cup (small florets)
Cheese - 1 cup ( Mexican Blend or any of your choice)
Salt - to taste
Pepper - to taste
Olive oil - 2 tblsp

How to make:

  1. Heat a skillet on medium heat.
  2. When hot, place a tortilla on the skillet and flip after 10 seconds.
  3. Reduce the flame to low.
  4. Sprinkle 1/4 cup cheese, followed by spinach and broccoli. 
  5. Season with salt and pepper and top it again with 1/4 cup cheese.
  6. Cover with another tortilla.
  7. Increase the heat to medium.
  8. Drizzle some oil on top.
  9. Flip them gently so the filling does not come out.
  10. Drizzle oil on the top and flip again after a minute once the cheese has melted
  11. Cook for another minute till both sides are brown.
  12. Remove from skillet and slice into 4 triangles.
  13. Repeat for the other 2 tortilla.
  14. Serve hot with salsa or guacamole.

Notes:
1. I have tried this with home made roti as well. Comes out well in case you do not have tortilla
2. You can make with corn tortilla as well, but it will be smaller.
3. You can use cheese of your choice
4. You can fill half the side of the tortilla and just fold the other half side instead of using 2 tortilla. Would be easier to flip.
