Thumbprint Jam and Almond Cookies - Vegan and Gluten Free

Another vegan and gluten free cookie in the baking this weekend with my son. We have become addicted to almond flour and started exploring more cookies with it.

I have used almond flour from Costco and they are the best. Also for the oats flour, I just took oats and simply grounded them to flour in my nutribullet.
If you do not care so much for vegan, feel free to swap out the coconut oil for butter. I just love the smell of coconut oil and hence used that.


Makes 30
Ingredients Required:
Almond Flour - 2 cups
Oats Flour - 1 cup
Baking Powder - 1/4 tsp
Sugar - 1/2 cup
Coconut Oil - 5 tblsp
Almond Milk - 2 tblsp
Fruit Jam - 1/4 cup

How to make?
  • Pre heat the oven to 350
  • Set aside a cookie sheet
  • In a large mixing bowl, add the flours, sugar and baking powder. Mix well
  • Add in the coconut oil and start crumbling with your finger tips
  • Add in a tblsp of almond flour and start combining the dough together. You can add the other tblsp of almond milk if required. 
  • It should be a tough cookie dough
  • Roll out tblsp of cookie dough into a smooth ball. Place them on the cookie sheet and make an indent with your thumb
  • Fill it up with a 1/2 tsp of jam
  • Pop it into the freezer for 5 minutes so jam solidifies
  • Bake for 12-13 minutes until the bottom is golden brown
  • Cool for 30 minutes and enjoy!
Notes:
  • I have used almond flour from costco
  • I have made the oats flour by grinding oats in my blender to a fine powder
  • You can swap out coconut oil with butter and almond milk with milk for a non-vegan version
  • The sweetness was just perfect as we do not like our cookies too sweet. So adjust your sugar accordingly to your taste
