Thai Basil Fried Rice - Vegan


This is one of our go to orders when we go to any Thai place - spicy basil fried rice. It is a perfect mélange of spice and lots of vegetables and tofu so pretty healthy. I tried this at home last week to pair it up with some Thai summer rolls and Tom Kha Soup - perfect Thai lunch it was.

Ingredients Required:
Rice - 1 cup ( I used sona Masoori, traditionally jasmine rice is used)
Sesame oil - 4 tblsp 
Soy sauce - 2 tblsp
Chilli garlic paste - 1 tblsp (or more depending on your spice level)
Garlic - 1 tblsp, finely chopped
Ginger - 1 tblsp, finely chopped
Spring onions - 1 bunch, finely chopped (whites and greens separated)
Tofu - 1 block, cut into 1 inch cubes
Basil - handful, roughly chopped

Vegetables
Beans - 5, cut into one inch piece 
Carrot - 1 , chopped into circles
Bell pepper - 1 , chopped into 2 inch pieces
Broccoli - 10 florets

How to make:
Rice: soak the rice for 20 minutes and cook them in a big pot of boiling water with salt and a tsp of oil.
Boil till 90% cooked and drain.
Run through cold water to separate them.
Drizzle some oil on top and set aside.

Tofu: In a pan, drizzle some oil and pan fry the tofu till they are golden brown on all sides. Flip them for even browning. Set aside.
Alternatively you can air fry them.

In a large wok, add the sesame oil and when hot add the ginger, garlic and whites of spring onions.
Fry on high heat.
Add the vegetables and toss them for a minute on high heat. 
They should be cooked partially but should still have the crunch.
Add the soy and chilli garlic paste. Give a good mix so everything comes together.
Season with required amount of salt.
Add in the tofu and the cooked rice.
Give a good toss so the rice and tofu are coated with the sauce.
Add in the green of the onions and basil, give a final toss and serve hot.
