Cassata Ice Cream

One of my favorite ice cream is the cassata Ice cre indian style. This is like an ice cream cake where different flavor ice cream is layored between a plain vanilla cake. Choice of flavors is upto your liking and I made it with strawberry, mango and Pistachio to taste the varied flavors and also a treat to the eyes with varied colors.
Pretty simple to make and assemble. Just make sure to start a day in advance so you have time for the ice cream to set and then again assemble and set.
You can go with store bought ice cream but the below recipe is all home made from ice cream to the cake.

Makes 1 loaf pan
Ingredients Required:
Milk - 1/2 cup
Chopped nuts - 1/2 cup 

How to make:
Slice the vanilla cake into 3 slices ( 1/2 inch thickness) running through the middle and scrape of the top brown layer so you don't get the crust.
It is better to bake the cake in the same loaf pan, so you can assemble it easily.
Layer 1: cake , and slightly brush some milk on top so it remains soft after freezing.
Layer 2: Strawberry ice cream. Make sure that the ice cream is a little melted so it is easy to spread evenly.
Layer 3: cake with milk brushed on top
Layer 4: Mango ice cream, little melted and evenly spread
Layer 5: cake with milk brushed on top
Layer 6: pistachio ice cream, little melted and evenly spread
Layer 7: sprinkle the chopped nuts

Cover with lid of foil and freeze for 6 hours.
Before serving remove from the freezer 10 minutes prior and slice with knife.
Serve chilled.
