Mexican / Spanish Rice - Instant Pot Recipe

Mexican or Spanish Rice also called as red rice or arroz rojo is an Mexican dish that can be add with burrito, taco or as is with beans on the side. We as a family love mexican food and this is one of our favorite and is super simple to make in an instant pot. Takes less than 10 minutes cooking time.

Serves 2-3
Ingredients Required:
Basmati rice - 1 cup
Olive oil - 2 tblsp
Onion - 1/4 cup finely chopped
Bell peppers - 1/4 cup finely chopped
Jalapeno - 2 tblsp finely chopped
Garlic - 1 tblsp finely chopped
Salsa - 1 cup
Water - 1 cup
Salt - 1 tsp
Cumin powder - 1 tsp
Cilantro - finely chopped to garnish
Lemon wedges

How to make:
Wash and drain the rice. Set aside.
Set the instant pot to saute mode and add the olive oil.
Add the onion and garlic and saute for a minute.
Add the jalapeno and bell pepper and saute for a minute.
Add the rice and saute for 2 mins.
Add the water and mix well from the bottom so no rice sticks to the bottom.
Add the salt and cumin powder.
Add the salsa and do not mix.
Close the instant pot and pressure cook for 5 minutes.
Release the pressure, open the lid and gently toss the rice so the salsa is mixed well.
Close and let it sit for 2 minutes.
Garnish with cilantro and a drizzle of lemon juice and serve.

Notes:
Traditionally mexican rice is used, I used basmati and it came out well.
You can used crushed canned tomatoes as well instead of salsa but adding salsa of your choice enhances the flavor.
Serve as a side with taco or burrito.
