Almond Flour Fudge Brownies - Vegan & Gluten Free

 I have been wanting to try a gluten free and vegan version of brownies and tried this recipe. These are super moist and fudge like brownies and tastes best with some Vanilla Ice Cream!

I have used almond flour from costco for this recipe, you can use any other store bought Almond Flour for this recipe. This is one of the best flours that I have got so far and enjoy trying out different recipes with it.

Almond Flour Cookies



Makes 8x8 pan

Ingredients Required:

Almond Flour - 1 cup

Cocoa Flour - 1/2 cup

Coconut Oil - 1/4 cup

Almond Milk - 1/4 cup

Water - 1/4 cup

Sugar - 1/2 cup

Baking Soda - 1/2 tsp

Vanilla Essence - 1 tsp

Salt - pinch

Semi Sweet Chocolate Chips - 1/2 cup

Flax seed meal - 2 tblsp + 5 tblsp water

How to make?

  • Pre-heat oven at 350
  • In a small bowl, add the 2 tblsp of flax seed meal and 5 tblsp of water. Mix well set aside for 5 mins
  • In a large mixing bowl, add the coconut oil, almond milk, sugar and the flax seed mix. 
  • Whisk well till light and airy
  • Add the vanilla, almond flour, cocoa powder, salt. Mix well
  • Add the 1/4 cup water and keep mixing
  • Add in the chocolate chips and fold gently
  • Pour in the greased pan and bake for 40 minutes
Notes:
1. If you want a more cake like version bake for additional time. Removing in 40 minutes will give you a fudge like texture
2. I have used flax eggs as a egg substitute
3. Sugar was just correct as we like ours a little on the less sweet side. If you have a sweet tooth, please add more sugar
